Brinjal Gothsu

Ingredients:
brinjals - 250 gm
small onions - 10
tomato - 1
tur dal - 1/2 tumbler
green chilles - 2
For garnishing:
oil - 1 tspn
mustard seeds - 1 tspn
jeera - 1 tspn
fennel seeds -1/2 tspn
chilli flakes - 1 tspn
curry leaves - 4
asafoetida - a pinch
Method:
In a pressure cooker pan, fry the onions.
Add chopped chillies and tomato.
After 2-3 minutes in medium flame, add and fry brinjals for 2 minutes.
To this mixture, add tur dal and 1 tumbler of water and pressure cook for 1 whistle and simmer for 10 minutes.
Mash the cooled mixture.
Garnish and serve hot with idli/dosa/pongal/rava upma.

A Twist to the Ole Tale of the Tortoise & the Rabbit


Once upon a time, a tortoise and a hare had an argument about who was faster. They decided to settle the argument with a race. They agreed on a route and started off the race. The hare shot ahead and ran briskly for some time. Then seeing that he was far ahead of the tortoise, he thought he’d sit under a tree for some time and relax before continuing the race. He sat under the tree and soon fell asleep. The tortoise plodding on overtook him and soon finished the race, emerging as the undisputed champ. The hare woke up and realized that he’d lost the race. The moral- “Slow and steady wins the race. This is the version of the story that we’ve all grown up with.”

THE STORY DOESN’T END HERE

there are few more interesting things…..it continues as follows…… The hare was disappointed at losing the race and he did some soul-searching. He realized that he’d lost the race only because he had been overconfident, careless and lax. If he had not taken things for granted, there’s no way the tortoise could have beaten him. So he challenged the tortoise to another race.

The tortoise agreed. This time, the hare went all out and ran without stopping from start to finish. He won by several miles. The moral - ” Fast and consistent will always beat the slow and steady. It’s good to be slow and steady; but it’s better to be fast and reliable.”

THE STORY DOESN’T END HERE

The tortoise did some thinking this time, and realized that there’s no way it can beat the hare in a race the way it was currently formatted. It thought for a while, and then challenged the hare to another race, but on a slightly different route. The hare agreed. They started off. In keeping with his self-made commitment to be consistently fast, the hare took off and ran at top speed until he came to a broad river. The finishing line was a couple of kilometres on the other side of the river. The hare sat there wondering what to do. In the meantime the tortoise trundled along, got into the river, swam to the opposite bank, continued walking and finished the race.

The moral - “First identify your core competency and then change the playing field to suit your core competency.”

THE STORY STILL HASN’T ENDED

The hare and the tortoise, by this time, had become pretty good friends and they did some thinking together. Both realized that the last race could have been run much better. So they decided to do the last race again, but to run as a team this time. They started off, and this time the hare carried the tortoise till the riverbank. There, the tortoise took over and swam across with the hare on his back. On the opposite bank, the hare again carried the tortoise and they reached the finishing line together. They both felt a greater sense of satisfaction than they’d felt earlier.

The moral - “It’s good to be individually brilliant and to have strong core competencies; but unless you’re able to work in a team and harness each other’s core competencies, you’ll always perform below par because there will always be situations at which you’ll do poorly and someone else does well.

Teamwork is mainly about situational leadership, letting the person with the relevant core competency for a situation take leadership. Note that neither the hare nor the tortoise gave up after failures. The hare decided to work harder and put in more effort after his failure. The tortoise changed his strategy because he was already working as hard as he could.” In life, when faced with failure, sometimes it is appropriate to work harder and put in more effort. Sometimes it is appropriate to change strategy and try something different. And sometimes it is appropriate to do both.

The hare and the tortoise also learned another vital lesson. When we stop competing against a rival and instead start competing against the situation, we perform far better.

To sum up- the story of the hare and tortoise has much to say:

Chief among them are that fast and consistent will always beat slow and steady; work to your competencies; pooling resources and working as a team will always beat individual performers; never give up when faced with failure; & finally, compete against the situation - not against a rival.

Nutritional Benefits of Bananas

Because of their impressive potassium content, bananas are highly recommended by doctors for patients whose potassium is low. One large banana, about 9 inches in length, packs 602 mg of potassium and only carries 140 calories. That same large banana even has 2 grams of protein and 4 grams of fiber. For the carbohydrate counters there are 36 grams of carbs in a large banana.

Fish Curry


Ingredients:
Fish - 250 gm
Tamarind paste - 1tspn
Chilli powder - 1 tspn
Salt - as required
For churning in the mixer:
Small Onions - 10
Garlic - 4 pods
Tomato - 1
For garnishing:
Oil - 2 tspn
mustard seeds - 1 tspn
Jeera - 1 tspn
Fennel seeds -1/2 tspn
Black urad dal - 1/2 tspn
Curry leaves - 4
Asafoetida - a pinch

Method:
Make a coarse paste of onions, tomato and garlic.
Heat oil in a vessel and put the seasonings.
Add the ground paste.
Wait for oil to float on the surface which means it is properly cooked.
Add water, tamarind paste, salt and chilli powder and cook till the raw smell has gone.
Add washed fish pieces and simmer for 5 minutes.
Add 1 teaspoon of oil on top so that fish pieces don't break out.

Have a fishy treat!

Dal Spinach


Ingredients:
Spinach - 2 bunches
Small Onions - 6
Tomato - 1
Garlic - 2 pods
Tur dal - 1/2 cup
Green Chillies - 4
Turmeric - a pinch
Salt - as required
For garnishing:
oil - 1 tbspn
black urad dal - a pinch
channa dal - a pinch
fennel seeds - 1/4 spoon
few curry leaves

Method:
Separate spinach leaves from the stalk.
Chop chillies, onion, garlic and tomato.
Add a pinch of turmeric and salt as required to the contents (spinach, chillies, onion, garlic, tomato,tur dal, 1 1/4 cup water ) in a pressure cooker.
Pressure cook for 1 whistle and simmer for 10 minutes.
When cooled, mash the mixture to a paste.
Garnish with urad dal, channa dal, curry leaves and fennel seeds.

Your dal spinach is now ready!

Spicy Mushroom


Ingredients:
Mushroom - 350 gm
Soya Sauce - 2 tbspn
Chilli sauce - 1 1/2 tbspn
Ginger - 1 inch piece
Garlic - 6 pods
Capsicum - 1
Coarse pepper powder - 1 tbspn
Oil - 1 tbspn
Salt - as required

Method:
Heat oil in a pan and fry chopped capsicum.
When the capsicum is soft, add chopped mushrooms and fry till it shrinks
Make ginger-garlic paste and add along with soya sauce, chilli sauce, coarse pepper powder and salt as required.
Fry the mixture for 3-4 minutes.

Veg Kurma


Ingredients:
Mixed Vegetables - 100 gm
Onions - 1
Tomato - 2
Salt - as required
For churning in the mixer :
Coconut - 3 tblspn
Green Chillies - 3
Ginger - 1 inch piece
Garlic - 4 pods
Cinnamon Stick - 1 inch
Clove - 3
Saunf - 1 tspn
Poppy seeds - 1/2 tspn
Fried Chana Dal - 2 tbspn
Turmeric powder - a pinch
For garnishing:
oil - 1 tbspn
black urad dal - a pinch
channa dal - a pinch
few curry leaves
few dry chillies

Method:
Garnish with the urad dal, channa dal, curry leaves and dry chillies.
Fry the chopped onions till they are brown and add chopped tomato. fry for 2-3 mins.
Add vegetables and fry for another 2-3 mins.
Add salt, as required.
Add the ground masala and boil and simmer till it becomes thick.
Serve hot.

Alternative:

Egg curry too can be prepared similarly.
To boil eggs:
Add eggs in boiling water and boil for 10 minutes.

Mint Biryani


Ingredients:
Rice - 1 tumbler
Pudina - 1 big bunch
Coconut - 5 tbspns
Onion - 2
Salt - as required
For masala:
Ginger - 1 inch piece
Green chillies - 3
Garlic - 10 pods
Cinnamon Stick - 1 inch
Clove - 3
Saunf - 1 tspn
Elaichi -1
Poppy seeds - 1/2 tspn
Seasonings:
oil - 1 tbspn
black urad dal - a pinch
channa dal - a pinch
few curry leaves
few dry chillies

Method:
Grind pudina in mixer.
Grind masala ingredients separately.
Grind coconut and extract coconut milk.
Slice onions into thin long pieces.
In a vessel, garnish with the seasonings and add cinnamon stick, cloves and elaichi.
Fry onions till brown.
Add masala, pudina and coconut milk.
Add salt, as required.
Empty 1 cup rice in a vessel with 2 cups of water.
Keep the vessel in pressure cooker and let it boil for 10 minutes after 1st whistle.
When cooled, decorate with chopped coriander, fried cashews and sprinkle lemon juice.
Mix and serve.
Alternative:
To prepare vegetable/mushroom/ coriander biryani, the method is the same with the addition of 1-2 tomatoes.
